Matcha (抹茶, まっちゃ) is a special type of green tea used in Japanese cooking. The green tea plants for matcha are shade-grown, and the stems and veins are removed in processing to create a very light, pure green tea flavor. Matcha is traditionally used in the Japanese Tea Ceremony, but is also incorporated into Japanese confectionary.
Matcha can be found in Asian grocery stores and in health food stores. The fresher it is, the better, and you can tell the freshness by the color. If the green color is dull, it’s long past its peak of flavor.Buy on Amazon
